There’s often something brewing in Scott Seidel’s world outside of Applied Trust -- and it’s usually fermented. Scott is an avid home brewer, concocting creative potables at least once a month. His specialties are beer, including a steam ale and a cherry stout, and root beer, which he makes from his own recipe. Scott is particularly excited about his Steam Ale recipe, and he’s agreed to share it with you.Besides Scott’s enthusiasm for home brewed beer, he enjoys hiking and fishing. In Boulder, you may cross paths with Scott on mountain trails, such as in Chautauqua Park and the ever-popular Mt. Sanitas. Elsewhere, Scott often hikes in Rocky Mountain National Park, or the Phoenix Park trail near Creede, Colorado. On the more technical side, Scott has been working with the core members of the Applied Trust team for more than five years. At Applied Trust, Scott is often involved with security incident investigations. In these situations, Scott is typically charged first with determining how and why the intruder breached the protection mechanisms that were in place, and then with identifying a solution to prevent that type of breach. “Managing security incidents is always a challenge,” comments Scott, “but it’s an important part of what we do. I think our clients appreciate that we’re there when they really need us. I get a lot of positive feedback about the incidents we’ve handled, and in the end everyone has a better understanding of what needs to be done proactively to avoid such situations in the future. It’s about making lemonade out of lemons, or as I often say, really good beer out of a pile of funny-looking ingredients. You can reach Scott for more information about his Steam-style Ale recipe, favorite hikes, or your security/infrastructure needs by emailing him at: This e-mail address is being protected from spam bots, you need JavaScript enabled to view it Simple Malt Extract Version of Steam-Style Ale - from the home brewery of Scott Seidel Ingredients: 6.6 lbs Plain light malt extract ½ lb Crushed crystal grain 1 Grain steeping bag 1 oz Northern blue hops (bittering) ½ oz Centennial hops (finishing) 1 pack American lager yeast Procedure: Add ½ lb crushed crystal grain to grain bag and bring 2 gallons of water to a slow boil. Remove from heat and remove grain bag. Add malt extract and bring to a boil for 35 minutes. Add bittering hops; continue to boil and add finishing hops 2 minutes before the end of a 45-minute boil. Add wort to fermenter and 3 more gallons of water(*). Add yeast when the temperature is about 70 degrees. Let ferment 5-10 days, then bottle or keg. (*) Scott recommends filtering or boiling all the water used for your beer, especially in Boulder. |
